FIrst of, depending on the HDMI cable you use, you cannot get audio with DVI to HDMI cable unless you use the correct cable. 
VIDEO ONLY: You get video only using a Mac Mini and a Mini-DVI to HDMI Adapter and you get video only using a Mac Mini and a Mini-Displayport to HDMI Adapter.
VIDEO &amp; AUDIO: You get video and audio using a Mac Mini and a Mini-Displayport &amp; USB to HDMI Adapter. Here is the link if you are interested: http://www.hdtvsupply.com/mini-displayport-usb-to-hdmi.html

As you already have purchased an audio cable, you can connect your RCA cable to RCA input into the Philips HDTV. If you are not getting sound, are you sure that you have connected the cable to the input, not to the RCA output. It might help, if you can send the name and weblink of your TV, so that we can find what kind of connections you have in your TV. You did not mention that you have a A/V receiver, so I assume that you do not have one?
